There's something magical about a properly smoked pork belly. When you get it right, the meat is melt-in-your-mouth tender with a beautiful bark on the outside. I picked this one up from Costco for just £27 - absolute bargain for what you get. This cook takes a bit of patience, but it's well worth the wait. Low and slow is the name of the game here, and if you follow these steps, you'll end up with something that rivals any American BBQ joint.
Ingredients
- - 7.12kg bone-in belly rib, rind on (Costco Kirkland)
- - Yellow mustard binder
- - Ed's House BBQ Rub
- - Smoked at 120°C until 75°C internal
- - Wrapped and taken to 95°C
- - Rested 30 mins, pulled and sliced
- - Any Barbecue Rub
Method
- 1. Trim any excess fat, but leave enough to keep the meat moist during cooking.
- 2. Season the meat generously with your chosen rub or SPG.
- 3. Secure the meat on the rotisserie spit, making sure it's balanced.
- 4. Set up your BBQ for indirect heat with drip trays underneath.
- 5. Aim for a cooking temperature of around 120°C (248°F).
- 6. Let the rotisserie do its work - the constant rotation bastes the meat in its own juices.
- 7. Rest the meat for at least 15-20 minutes before carving.
