Chicken 74°C / 165°F Safe and juicy
Pork (chops/loin) 63°C / 145°F Can go slightly pink
Beef (steak) 55°C / 131°F Medium-rare
Pulled pork/brisket 95°C / 203°F Fall-apart tender
