How to Make Chicken Lollipops from the UK’s Cheapest Chicken!

Chicken on the BBQ is an absolute crowd-pleaser. Get the skin crispy, keep the meat juicy, and you've got a winner. Chicken lollipops look impressive but they're actually dead easy to make. The secret with chicken is getting the temperature right. Too hot and you'll burn the outside before the inside is cooked. Too low and you won't get that crispy skin we're after.

Method

  1. Trim any excess fat and remove the rind if present.
  2. Season generously with salt, pepper, and garlic (SPG) or your preferred BBQ rub.
  3. Preheat your smoker to 180°C (356°F).
  4. Allow the meat to rest for 15-30 minutes before serving.
  5. Pull the meat apart using forks or bear claws, discarding any excess fat.
