Chicken on the BBQ is an absolute crowd-pleaser. Get the skin crispy, keep the meat juicy, and you've got a winner. Wings are perfect for feeding a group without breaking the bank. The secret with chicken is getting the temperature right. Too hot and you'll burn the outside before the inside is cooked. Too low and you won't get that crispy skin we're after.

Method
- 1. Apply your BBQ rub generously, making sure to coat all sides.
- 2. Preheat your BBQ or smoker to the desired temperature.
- 3. When the bark has set and the meat stalls (around 70°C internal), wrap in foil or butcher paper.
- 4. Pull the meat apart using forks or bear claws, discarding any excess fat.
