COSTCO Beef Ribs the Best Buy in BBQ?

Beef short ribs are absolutely loaded with flavour. All that connective tissue breaks down during a long cook, leaving you with incredibly rich, tender meat. Found these at Costco and they didn't disappoint. These need a bit of time on the smoker, but they're pretty forgiving. As long as you're patient and don't rush them, you'll end up with something special.

Ingredients

  • - Spg Or Salt Pepper And Garlic
  • - Tin Foil

Method

  1. 1. Trim any excess fat and remove the rind if present.
  2. 2. Season generously with salt, pepper, and garlic (SPG) or your preferred BBQ rub.
  3. 3. Preheat your smoker to 120°C (248°F).
  4. 4. Place the meat on the smoker and cook at 120°C for approximately 5 hours.
  5. 5. When the bark has set and the meat stalls (around 70°C internal), wrap in foil or butcher paper.
  6. 6. Continue cooking until the internal temperature reaches 79°C (174°F).
  7. 7. Check for probe tenderness - the thermometer should slide in like butter.
  8. 8. Rest the meat for at least 1 hour before slicing or pulling.
  9. 9. Slice against the grain and serve immediately.
