BBQ Baked Beans with Leftover Pulled Pork

This is one of my favourite cooks. It's the kind of recipe that looks impressive but is actually pretty straightforward once you know what you're doing. I've kept the method simple so you can focus on getting the basics right. Once you've nailed this, you can start experimenting with different rubs and techniques.

Ingredients

  • - 1 diced brown onion
  • - 3 tins of baked beans
  • - Leftover pulled pork
  • - Homemade BBQ rub (recipe below)
  • - BBQ sauce (your favorite)
  • - Worcestershire sauce
  • - A splash of water
  • - Grated cheddar cheese (for topping)
  • - 2 tbsp paprika
  • - 1 tbsp brown sugar

Method

  1. 1. Start with a tin of baked beans as your base.
  2. 2. Add any leftover pulled pork or smoked meat to the pan.
  3. 3. Stir in a splash of BBQ sauce for extra flavour.
  4. 4. Add a touch of brown sugar or maple syrup if you like them sweeter.
  5. 5. Simmer on low heat until everything is warmed through and the flavours have combined.
  6. 6. Taste and adjust seasoning - a bit of hot sauce works well here.
  7. 7. Serve as a side dish with your BBQ.
