REAL Tzatziki in Only 5 Mins — No Blender, No Watery Sauce
No gyros is complete without a proper tzatziki. This isn't the watery stuff you get in supermarket tubs - this is the real deal, thick and packed with flavour. The secret is getting the water out of the cucumber. Skip this step and you'll end up with a runny mess. Take your time with it and you'll have tzatziki that's restaurant quality.
Ingredients
- - 1 whole cucumber, grated & well-squeezed
- - 400g Greek-style natural yoghurt
- - 1 tsp lazy garlic
- - Juice of 1 lemon
- - 2 tbsp olive oil
- - 1 tsp salt
- - 2 tbsp chopped dill
- - The Lazy Garlic
- - The Rub And A Bit Of Oil
Method
- 1. Grate the whole cucumber using a box grater, leaving a small nub at the end for grip.
- 2. Place the grated cucumber in a clean tea towel or muslin cloth.
- 3. Squeeze firmly over the sink to remove as much liquid as possible - this is the key to thick tzatziki.
- 4. Add the Greek yoghurt to a mixing bowl.
- 5. Add the squeezed cucumber, garlic, lemon juice, olive oil, and salt.
- 6. Stir in the fresh dill and mix everything together thoroughly.
- 7. Taste and adjust seasoning - you may want more lemon or salt.
- 8. Refrigerate for at least 30 minutes before serving to let the flavours meld together.
