REAL Tzatziki in Only 5 Mins — No Blender, No Watery Sauce

No gyros is complete without a proper tzatziki. This isn't the watery stuff you get in supermarket tubs - this is the real deal, thick and packed with flavour. The secret is getting the water out of the cucumber. Skip this step and you'll end up with a runny mess. Take your time with it and you'll have tzatziki that's restaurant quality.

Ingredients

  • - 1 whole cucumber, grated & well-squeezed
  • - 400g Greek-style natural yoghurt
  • - 1 tsp lazy garlic
  • - Juice of 1 lemon
  • - 2 tbsp olive oil
  • - 1 tsp salt
  • - 2 tbsp chopped dill
  • - The Lazy Garlic
  • - The Rub And A Bit Of Oil

Method

  1. 1. Grate the whole cucumber using a box grater, leaving a small nub at the end for grip.
  2. 2. Place the grated cucumber in a clean tea towel or muslin cloth.
  3. 3. Squeeze firmly over the sink to remove as much liquid as possible - this is the key to thick tzatziki.
  4. 4. Add the Greek yoghurt to a mixing bowl.
  5. 5. Add the squeezed cucumber, garlic, lemon juice, olive oil, and salt.
  6. 6. Stir in the fresh dill and mix everything together thoroughly.
  7. 7. Taste and adjust seasoning - you may want more lemon or salt.
  8. 8. Refrigerate for at least 30 minutes before serving to let the flavours meld together.
