How to BBQ Butternut Squash
This is one of my favourite cooks. It's the kind of recipe that looks impressive but is actually pretty straightforward once you know what you're doing. I've kept the method simple so you can focus on getting the basics right. Once you've nailed this, you can start experimenting with different rubs and techniques.
Ingredients
- - 1–2 butternut squash
- - Olive oil
- - SPG (salt, pepper, garlic)
- - Smoked paprika
- - To serve: butter, cream cheese, OTT chilli, grated cheese (optional)
- - Method (quick steps)
- - Trim ends, halve lengthways, scoop seeds.
- - Dot with butter & cream cheese to melt. Load with chilli, finish with grated cheese, and dig in.
Method
- 1. Cut the butternut squash in half lengthways and scoop out the seeds.
- 2. Brush generously with olive oil and season with salt and pepper.
- 3. Set up your BBQ for indirect cooking at around 180°C.
- 4. Place the squash cut-side up on the grill.
- 5. Cook for 45-60 minutes until tender when pierced with a knife.
- 6. Optionally add butter, brown sugar, or maple syrup in the last 15 minutes.
- 7. The natural sugars will caramelise beautifully over the fire.
